Cliche but I always loved Moonlight Sonata.

Other choices would be Waltz in D-flat or Nocturne in E-flat major (Op. 9 No. 2)

I never thought I'd see a real discussion of classical music on CE. These are good suggestions.

To me, Chopin's collection of Nocturnes are one of the greatest things to ever happen.

Stravinsky's Firebird Suite is one piece I can listen to all the way through once a day and never tire of it.

Debussy is always bliss, including his more subdued pieces such as Reverie.

And a sleeper that many people don't know about would be the Memo Flora piano concerto by Takashi Yoshimatsu. Modern, but absolutely beautiful.

I mean, the rite of spring single handedly provided enough inspiration for nearly all modern film music as well as some metal and rock rhythms

I love my French composers. La Mer by debussy is, in my opinion, the greatest piece of art ever created

Ravel is great too

Standards like Beethovens 9th is obvious for selection...or the emperor.

Brahms violin concerto is tasty

This is off topic, probably already known, and not nearly on the same level as anything mentioned so far, but I have to say, I really enjoy Lindsey Sterling as a modern day musician (if we'd even call her that, I'd think so though).

Blends her music in a really unique and awesome way IMO. Solid mix of classical and edm(ish) in a way I wasn't expecting when I first heard her years ago.

David Braid (piano. I briefly studied composition with him) released an album with the Epoch String Quartet, and it's really good. it's called "Flow"

not sure if you'll be able to find it, but it's well worth the trouble if you are

Looks like most of the early modern and romantic classics have been listed, so I'll contribute some older stuff

Literally any harpsichord sonata by Domenico Scarlatti. Pick any one at random. It literally doesn't matter.

L'Orfeo by Monteverdi

Prelude in E Major (BuxWV 141) by Buxtehude

Pretty much any violin concerto by Vivaldi will suffice (they're all a bit similar)

Symphony 92, Haydn

Piano Sonata in F Major (K. 332) Mozart

Palstinalied by Vogelweide

And you should probably listen to at least the Kyrie of the Machaut mass (Messe de Nostre Dame). It was a landmark piece of liturgical music.

Heinz Kiessling's "Temptation Sensation" is one that always gets me smiling >_>

The Blue Danube is really fun to waltz to, particularly a specific version that has like 3 false endings and tempo changes everywhere.
