Right one is a Fissler Stainless Steel pan. Cost me $160 (Original price : $230)

Left and bottom one is the same but different sizes (just showing the bottom of it)
They are Scanpan CTX. Nonstick pans. Can use any utensils on them, ovensafe up to 500F/260C. They came as a set, both cost me in total of $130 (Original Price: $190)

Tomorrow I get the cast iron one.

What's the difference between good frying pans and the cheap ones? Idk anything about this stuff.

Well more expensive ones has a longer lifetime and more even better heat distribution. Then of course comes other things like with the Scanpan, can use metal utensils on them, can put it in the oven, safe for higher temps etc, better nonstick etc. Also things like comfort using them etc.

I'm expecting to have these many years.

Good ones don't warp after use and have good non-stick coatings.

Besides that they're borderline indestructible, what's the appeal of getting a cast iron pan for you? Ive nevet had one, but the care for them seems outrageous.

You need to buy pans not made by Fisher-Price.

I wanted one so I had all the types. But cast iron can give a sear a different kind of flavor, very subtle but still different. It's not that outrageaos to take care of a cast iron pan tbh.

Ehh, cool.
I usually just stick with whatever America's test kitchen recommends. They're pretty fucking spot on.
Although I'm going to start collecting some Mauviel pieces.

My next purchase should be a set of good knifes (not necessary from the same set). But I can't order that, I need to test them out in my hand to get the feel. I'm thinking of Global knives but I dunno, never tried one. Need to find in a physical store.

Only for tomatoes, then again we dont have the sharpest knifes. I guess I could have one anyway.

Oh yeah how could I forget, a great sharp cleaver.

I just use bread knife for tomatos, it's not like you often need to do extremely precise cutting with tomatos anyway. never felt awkward to me

I can use a chef's knife for tomatoes sometimes, it depends what I want to do and how ripe it is and how sharp the knife is. Having a small serrated knife is just something I want to have.

Do they guarantee the nonstick coating? Metal on metal wears everything down eventually. But other than that concern they seem pretty sweet
