Last cutscene I viewed is the one where The Boss crushes Snake's hand with her horse. I loaded further back than I should have been, and soldiers somehow detected me despite me having 85% camouflage but they didn't go after me, they just went offscreen for no discernable reason. The fuck?

i'd say youre a quarter way in, so 20-25 hours would be a safe bet.
of course it would be much faster if you skip the cutscene or not playing around with things like codec, but that wouldnt be fun.

you can blow up food and weapon sheds.

if you blow up food, guards will be hungry, and you can toss them rotten food which will mess them up

you can also throw venomous animals that you captured, rather than killed

with weapon sheds, it'll affect weapons enemies will have when they face you

Does anyone know all of the things I can do with CQC? It seems extremely conditional.

Best thing to do is ignore it. The controls for it are terrible. But if you really want to know,

Circle while running is the slam move.
Quick tap circle to punch. Two more to PPK.
Hold circle halfway to hold an enemy at knifepoint.
Push circle hard while holding to slit throat.
L3 (IIRC) while at knifepoint to interrogate (helpful move but stupid and hard to do).
Push a direction and circle (IIRC) while holding to throw an enemy to the ground (helpful against a particular boss that you fight in a pit because it sets up a shotgun blast).
Square while holding to use your captive as a human shield, but it's so hard to pull off without throat slitting that it's completely useless.

And I think that's it.

My favorite MGS game. There are so many little details in there, the codec conversations are great and the bosses are pretty creative and open-ended.

What version are you playing? Subsistence has a better camera.

From the top of my head, you can do a regular melee combo (repeatedly press the QCQ button (circle?)), a slam (hold circle and a direction simultaneously), a grab (hold circle *lightly*) followed by a choke out (press circle repeatedly while grabbing), throat slit (hold circle heavily while grabbing), interrogation (press L3 while grabbing), pulling out your weapon (hold the gun (square?) button lightly while grabbing and aim as normal with the right stick, release to fire) or walking around (with the left stick while grabbing).

I may be a bit off with some of them. As DevsBro said, they can be quite hard to pull off. 4 and V improve the CQC controls quite a bit.

They can see you if they're looking in your direction. From how far depends on your camo meter. You just have to get a feel for it. They scrapped the radar for this one, probably because people were playing on the double-digit-by-double-digit minimap instead of the full screen in the previous games. I know I was.
