What's interesting is that most people are certainly wrong about what the good parts of the cow are.

For example, the obsession with filet and tenderloin. It's like these people are just parroting something they read in a cosmo article rather than figuring it out for themselves. And so they'll continue to pay $60 for a cut of steak with no flavour or texture to it.

I've only had camel in burger form from an African place in St Paul; the meat was surprisingly dry, but the burger was good - definitely an interesting experience, at least.

Rabbit is amazing & I don't know why it's not more common; it's like a more tender, complex version of chicken.

If it was dry that's more down to how they cooked it I'd say. No meat should ever really be dry. For example, a lot of people would say that kangaroo is dry or tough, but only because they didn't realise how lean it is and they overcooked it. Camel is similar.

Rabbit isn't more common I imagine because people have absolutely ridiculous benchmarks for what they think is ethical and unethical to eat. Rabbits are fluffy and cute looking, so people don't want to eat them.

It could also be because you don't get much yield out of a rabbit and they kind of have to stay wild. It's really common in the UK though, as we have an overbreeding problem here.

Tenderloin is flavourless crap, melts like butter in your mouth but it's the type of steak I'll only eat with a marinade, everything else I just use salt/pepper/garlic. Ribeye is the way to go. Sirloin is a close second.

See I'd say it's worth going to a butcher's and getting some of the cuts that nobody asks for because they don't think of them. If you braise the neck it's some of the best meat you'll ever have, for example. Bavette and Hanger are also ridiculously underrated.

I enjoy this world currently because while trendy people are overpaying for tenderloin I can get the "offcuts" like this for half the price.

Yea one of my favourite "off-cuts" I've had is beef knuckle. Had one a few months ago that is probably the best steak I've ever personally cooked. Surprisingly it was Thai beef as well.

Yes! All that bone and marrow and fat. Could cook this for 15 hours and it won't dry out.

Yeah I had filet once.
