Rabbit isn't more common I imagine because people have absolutely ridiculous benchmarks for what they think is ethical and unethical to eat. Rabbits are fluffy and cute looking, so people don't want to eat them. It could also be because you don't get much yield out of a rabbit and they kind of have to stay wild. If you braise the neck it's some of the best meat you'll ever have, for example. Bavette and Hanger are also ridiculously underrated.
