So, Voldemort originally intended to create 7 horcruxes, right? However, he was unaware that Harry was the seventh. Wouldn't that imply there's still a seventh horcrux out there somewhere?

Splitting the soul isn't exactly a stable thing, but I also don't think Voldemort had a real reason of picking 7 splits. I could be wrong, it's been a while since I read the books.

I believe the reasoning behind 7 pieces of soul (6 horcruxes + the actual Voldy) is because 7 is meant to be a powerful number in terms of magic. I can't remember exactly where it says that, but I can have a look around if you want. Or it's possible I'm misremembering.
