I don't play any modern games and in my whole life I've only owned CRTs. All I know is in the mid 2000s HDTVs were considered the devil for games because of "omg teh display lag". But now it's gone on for long enough that I can't buy any current systems or games because I lack a HDTV. I would like to finally buy a PS4 (and later down the line a Switch).

I don't know what to look for or how. Please assist me so I can join you guys playing in the 2010s.

If you want the nicest picture then you'll want a PS4 Pro and a 4k TV (and there are some caveats associated with that someone more familiar with the tech than I am would need to tell you). If you're just looking for a TV then a regular PS4 and a 1080p TV should work.

Check to make sure you have enough HDMI inputs to support your consoles and anything else you plan to plug in. Display lag matters if you plan on playing competitively, but if you're not doing that then most anything should work these days.

If you're worried about response time, look at gaming monitors. BenQ makes some good ones, one of them was the official EVO monitor last year (maybe this year too?) so it's good enough for real competition. However you won't find them at sizes bigger than around 27 inches or resolutions greater than 1440p, and 24 inches 1080p is more common.

This is a myth - both of the HDTVs in my house have a "game mode" but they don't really do shit for the delay
