If I'm getting this right, they have two different writing conventions (nynorsk and bokmål) with different spelling and grammar, with bokmål being the one that essentially emulates Danish from when they were under Danish rule. But neither of these forms necessarily represent spoken Norwegian?

yes BUT wise cemen have told that english is literally the hardest language to learn because it doesn't make sense. which makes a lot of sense.

Well Norwegian and Danish are brother languages so they are more similar than different. I think actually speakers of Old Norse called the language the "Danish tongue/language"
Other nations use Diglossic standards too. In Haiti both Creole and French are read, in most Arab lands there the colloquial language they use along with MSA. --- sig ... Copied to Clipboard!

French has actual rules on how spelling and pronunciation go hand-in-hand. It's not 100% consistent by any means, but it's nowhere near as bad as English. --- ... Copied to Clipboard!

Written bokmål is largely spelled how Danish is pronounced (Danish written language has a lot of silent letters), but spoken Norwegian sounds much closer to Swedish than it does spoken Danish.
At university I had a professor from Hungary for a short time who said when she first learned spoken Danish it was easier for her to read Norwegian (Bokmål) than it was for her to read Danish. ... Copied to Clipboard!

Yeah my Danish family say it's pretty easy to read Norwegian/Swedish but not so much to understand them spoken

Yeah French orthography isn't really as bad if you learn it. Especially if you compare it to Spanish; I mean French writing can be better understood if you understand Spanish grammar.
