There was a church that opened for the kids after school on mondays i know if.

Some may only do things on wednesday or saturdays, like bible studies, but there are tons of denomations that stay active throughout the week. A lot of churches act as preschool and day care centers for supplemental income. Many are staffed throughout the week by full time employees.

Yes. Various support groups often meet. Sometimes local community events are planned around those days. They also usually have space they will rent out to various private parties. It entirely depends on the church and the size of the community though.
