All my star wars fan fics have a guy who force presses the button of his opponent's saber while it's still on his hip, and it just cuts the dude's leg off right there. Battle won.

Because it's a movie. It wouldn't be fun if they actually thought like real life. What good would a movie be if the good guy shot the bad guy in the head at the beginning of the movie and it was over in five minutes? It's gotta be long and needlessly drawn out for our entertainment

Even setting aside the fact that doing that would result in a bunch of anti-climaxes and poor storytelling, I assume there is some sort of personal field of force involved. Considering they can deflect blaster bolts on a whim, I assume they are always shrouded in the force somewhat. There also has to be some sort of distance limitation, otherwise Luke could just pull Darth Vader out the nearest window and space him while floating by in the Falcon.

In the EU (which isn't canon anymore, but still part of my head canon), force users will have a sort of "force bubble" around them that gives basic protection against enemy force users. That's why duels aren't decided by who can push the other off a ledge faster. They can only use their force against the opponent directly when their opponent loses concentration and their barrier falters.

It's the same issue as the Harry Potter universe. There are all these avenues for cool ways for Wizards to fight, and yet we only get like one alright battle in Dumbledore v Voldemort in the 5th (I think?) book. That's right, I forgot. To be fair, he is one of the strongest force users ever, though. You could totally do it to somebody who isn't a force user. The problem is when its two force users against one another there powers sorta negate each other except when there are openings or if another user is way stronger in the force.

IIRC in the Jedi Academy game, if your force bar is at 100% you are immune (or highly resistant) to some force powers like force push. Once it drops below 30% (or something) then you can get pushed.
