BBS and CoM both have fun battle systems and plot relevance so they're worth playing but the rest are boring and have very little importance. Even still, you can follow 2 without playing CoM so that will likely be true for 3 as well without playing BBS.

Chain of Memories and Birth by Sleep are definitely worth playing but not necessary.
358 is almost entirely irrelevant and boring gameplay (though you can't play it on the rerelease anyway since it's iust cutscenes) and ditto for Dream Drop. Re:coded offers almost nothing for the plot from what I hear but I haven't actually played that one.

Yeah, I've always wanted to play BBS. I didn't like the battle system in Chain of Memories that much, so I kinda dropped halfway through.

You should just get Kingdom Hearts 1.5 HD Remix (Includes Chain of Memories), and Kingdom Hearts 2.5 HD remix (Includes Birth By Sleep).

Both of these include KH 1 and 2 (In their Final Mix version, which is the best). You can just play those if you want.

I think the PS4 has - release of 1.5 and 2.5 together, don't they? Anyways, yeah I can see how it wouldn't be for everyone but I enjoyed CoM's battle system and story. BBS has the most fun battle system of them all though, it just sucks at post game battles.
