Or just any other good anime series? I love DBZ but haven't really watched much else.
I do have one criteria and that's the style of the drawings. I have no idea what it's called but it's more mature? better? I don't know. Stuff like One Piece or FMA are shows I don't really like looking at. So yeah, recommend away.

FMA is pretty mature, both of them. In a Manchild sort of way.
But yeah, it looks kiddy but deals with some dark themes.
I recommend:
Mobile Suit Gundam: 0080 War in the Pocket. If you watch the English dub (which isn't bad as far as late 90s dubs go), one of the main characters is voiced by David Hayter. It's pretty short, only 6 episodes, but it's pretty mature.

Watch Ghost in the Shell: Stand Alone Complex. Both seasons are amazing and make you think (though I guess there's probably more philosophy than most people would be able to stomach). FullMetal Alchemist is also worth watching, the style really isn't that kiddy, and the story is quite serious and emotional.

The only one I didn't care for is 08th MS Team, but most people seem to love it so I'm in the minority there. Gundam Unicorn is pretty awesome, but it isn't finished yet BTW. Won't be done until next November.
Of the non-UC shows, I think the stand out so far has been Gundam X, which is sort of like Mobile Suit Gundam meets Mad Max. In other words, it's post-Apocalypse Gundam.
Wing is okay, but I'm not a fan of the aesthetic. Too frilly and aristocratic. Plus there is a stretch of episodes where they get really hamfisted with their pacifism and it's annoying.

Samurai Champloo is pretty amazing and definitely worth checking out. It has great action, a great dub (if you're into that), and a pretty good story as well. As people said it's also by the same person and has a lot of the same style.
Outlaw Star is an older one that has some similarities to Cowboy Bebop. Honestly I watched it a long time ago and barely remember anything about it so I can't give a strong recommendation beyond remembering that I liked it a while ago.
If you're not adverse to watching some more mature stuff, you should absolutely check out Shigurui -- It's one of the better samurai series I've seen. Very visceral, brutal, violent, but not in an over the top manner -- They don't just show gore for the sake of gore, it actually means something. It's an anime about how deadly the life of a samurai TRULY was. Most fights ended in one or two moves. The story is pretty amazing and it's a great historical piece that shows two samurai who will go through absolutely anything to destroy each other because of a very real hatred that you see build up from day one. The anime ends before the conclusion, but the manga is fully translated now so if you really like the series you could read the manga to see how the story ends.
On another note, a fantastic samurai anime which is fairly recent and was overlooked is Saraiya Goyou (The House of Five Leaves). I don't believe it has a dub but you can watch it subtitled although I think for a casual anime fan this one is going to be the hardest to find. It's not very anime-like at all, at least not in how the typical western fan thinks of anime. There is close to 0 focus on action, no awkward Japanese humor that is hard to get into without knowing the culture. The entire story focuses on the character and the interactions between the characters in the story, their development, heavy emphasis on storytelling and is also a period piece like Shigurui that attempts to at least somewhat accurately portray the era (vs something like Samurai Champloo which is all about BADASS STYLE. Both great, just two opposite ends of the spectrum). The American TV show that it actually sort of reminds me of would be Breaking Bad since it's about a guy who is forced into the criminal element somewhat against his will but finds himself growing to understand that lifestyle and be more familiar with it as the series progresses. There's not as much of a sense of tension or danger as Breaking Bad and some of the more interesting plot threads (one in particular that I thought was going to develop into something amazing) don't live up to their full potential but all in all it's still a very good series and one of the best samurai anime I've seen.
eh, I think sub vs dub wars are mostly a thing of the past now but I'm sure there are still some people who 'hate' dubs. I don't care either way personally, although I prefer both types for different things.
. . . also I just realized almost everything I recommended is a samurai show. no idea how that happened, hahah. I'm actually going to go through my list in a minute and see if there's some other good stuff you might be into that I could rec.
I don't hate dubs; it's just that I tend to find them to be of vastly inferior quality
there are a few exceptions I'm aware of (Baccano! has a decent dub, YuYu Hakusho's dub is considered superior by some), but for the most part the original work tends to be better
it helps that Japan has a much healthier VA industry!

Gungrave Berserk (though the manga is better) Monster Ghost in the Shell Texhnolyze (I'd mention the other aBe anime series, but Haibane is more like Murakami and Lain is pretty dense and Texhnolyze is probably the most similar in overall themes anyway) Ergo Proxy (even though I didn't like it much due to the disjointedness it might be worth a shot) Trigun (though again the manga is better) Outlaw Star Vampire Hunter D (again even though I don't like the series much but it's one of the more well known anime action movies) Boogiepop Phantom (although it's helpful to read the first novel/manga for a clearer grasp of the plot and characters) Le Chevalier D'eon Sword of the Stranger Garden of Sinners
