The best suggestions you haven't said you played already so far I'd say are...

Shin Megami Tensei II (translated, which most roms will have built in)
Shadowrun

For some others I didn't see:

Fire Emblem: Seisen no Keifu (Get a translated version)
Fire Emblem: Thracia 776 (Also get a translated version)

Those two are the fourth/fifth in the series, different continent/universe from the others, but the two connect to one another. Fairly unique.

maybe Dark Law: The Meaning of Death?

It's pretty easy/short and has some annoyances, but it's still kind of interesting since it feels like it has some WRPG/P&P/adventure game influences and has a more serious tone than many RPGs of the era.

I think I'll go with Earthbound so far, give it another chance, this game has a cult following so there must be something going on.

I'm getting the feeling that Earthbound is a dark game hidden under bright colors (Which is cool imo), but I may be wrong.

Bleh. Personally I hated Earthbound.

Characters themselves had no personality or cool designs, gameplay was boring, music wasn't that good, story stays the same pretty much the whole game.

If by "pretty good" you mean broken as **** then yeah.

When one character has an ability that prevents all actions by all enemies for 3 turns and there is a full party full MP heal that you can easily buy 99 of... things get stupid.
