Kids helped. My son cracked an egg on the counter and some of it got on the stand up mixer. When I went to clean it I knocked the mixer over and smashed my phone lol

Not going to cut into it until tomorrow but I like the way it came out. Debated doing a simple powdered sugar finish but I wanted to try the glaze as I'd never done it.

Looks like something theyd eat in Lord of the Rings to fuel the calories needed for massive hiking.

People with desk jobs shouldnt have more than a nibble, but most people (including me) probably cant portion control something like that

My wife says she would've gone with the powdered sugar but that's her pre-taste judgment. We're gonna have some after lunch. Didn't try it last night because the kids wanted to try it with me and I wasn't going to give them a ton of sugar right before bed

I'm not entirely sure how to make it work. Chocolate would be an obvious base for the combo, putting pistachio and some manner of chili pepper into a chocolate bar or chocolate ice cream, but that's too easy, and we're not talking about chocolate. As far as topping a cake goes, I guess lime would work in the glaze, then probably a plain cake (lime cake would be a bit overpowering). I'd like more than a plain cake there, but I can't think of anything that would work with the other three, other than maybe doing a pistachio cake.

It did occur to me, though, that adding some rose water to the pistachio-lemon glaze would be quite nice. Possibly with a bit of cardamom in the cake. But that's neither here nor there.

If you had gone with powdered sugar, it'd probably be gone by now, or at least really patchy. Powdered sugar has a tendency to pull moisture out of the air and the product, dissolving it and effectively turning it into a very concentrated glaze if you leave it for longer than a few hours. In the case of a pound cake, I'd actually advise against that, because pound cakes tend not to have that much moisture to spare. You won't significantly dry it out, but you're still generally going to benefit more from adding moisture with a glaze or syrup than garnishing it with something dry.

Yeah the cake was pretty easy to make but the glaze was a pain in the ass. I didn't have pre-chopped pistachios so I had to chop a ton of them up. I wouldn't attempt this glaze again without pre-chopped on hand.

I like the idea of pistachio-lemon glaze and wouldn't want to omit the pistachio (I think the glaze needs something other than just lemon otherwise it would be lemon through and through). The rose water sounds like a good tip. I don't have any but I could pick some up. I'd be open to substituting with something. Maybe an lemon icing drizzle instead?

I have a hard time with cardamom. It's such a strong spice. Did these no-bake coconut cookies a couple weeks ago and threw in a bit of cardamom and it was too much. It was probably an eighth of a teaspoon but it was still overpowering lol

If you've got a food processor, you can do a decent job of chopping nuts by pulsing them in it (don't go for too long or you'll powder them). If not, putting them in a plastic bag and bashing them with a rolling pin works. In the absence of a rolling pin, a solid frying pan will also do the job (though that'll be more crushing than banging). I wouldn't chop by hand, unless it's a fairly small amount. Ain't nobody got time for that.

Yeah, you'd definitely want something other than just plain lemon on top of lemon. If you didn't want to bother with adding something to it, you could have done a flavour other than lemon. A plain flat icing (icing sugar, add small amounts of water until you get to a good, thick pouring consistency) would work, some kind of flavoured syrup (big fan of lavender with lemon pound cake, especially if you throw some fresh blueberries on the plate as well), white chocolate ganache, jam, any other glaze... Lemon pound cake is quite versatile.

It's a flavour that I quite like (I actually put some in my oatmeal this morning, along with dried apricots, honey, sliced almonds, and a pinch of caradamom), but it's not for everyone. Like most floral flavours, it's one you really have to be careful with because there's a very fine line between having it be completely drowned out and having the whole thing taste like you're eating a bouquet. It's worth experimenting with, just maybe experiment on a smaller scale before risking a whole cake (or just follow a recipe to the letter).

It can be a tricky one. When it's right, though, it's really a lovely flavour. Depending on what I'm doing, I'll sometimes grind my own (crack the pods, dump the seeds out, crush them in a mortar and pestle), and that just smells amazing. It's a ton of work, though, so usually I'll use pre-ground stuff (or whole pods, if suitable).

That's the recipe I use. I particularly like the pound cake, and I've repurposed it for a few other things. it gets a really nice crust on it.
