Looks like the risk of salmonella isn't quite big enough for people to consider it a threat. I'd say: if they choose to ignore multiple warnings, let them have it, and learn the hard way.

As someone of who was born and raised in Wisconsin, I can atest to this...to some degree. But Southeast Wisconsin (Milwaukee area) isnt like this amongst younger people.

Steak tartare is a meat dish made from raw ground (minced) beef or horse meat. It is usually served with onions, capers, pepper, Worcestershire sauce, and other seasonings, often presented to the diner separately, to be added for taste. It is often served with a raw egg yolk on top of the dish.

You are right. It has a raw egg on it. My bad.....

As much as I want to say this is probably unpalatable, nobody bats an eye at raw sushi or shellfish where there's just as much of a risk of foodborne illness if improperly prepared (literally every menu prints the warning) and in some cases (oysters particular) has the worst texture imaginable.

Raw chicken is the line though: highest risk, lowest reward
no, both of those are pretty disgusting too. key difference though is that sushi isn't made from ground fish. the grinding process exponentially increases the risk since it takes whatever was growing on the surface of the muscle and incorporates it into the ground meat.

I think this is exactly wrong. At least according to local public radio, it's mostly a milwaukee area thing and less common up north
