I've always been interested in those games, but never tried any of them. Can I just pick any one of those up, or do I need to start from the beginning?

There's multiple series. You can start from the beginning of any series. Atelier Rorona is the start of the Arland series (Rorona -> Totori -> Meruru > Lulua), Ayesha is start of the Dusk series (Ayesha -> Escha & Logy -> Shallie), and Sophie is start of the Mysterious series (Sophie -> Firis -> Lydie&Suelle). There's also the Iris (more traditional jRPG) and Mana (jRPG + Harry Potter but with alchemy kind of) series on the PS2.

As long as you play the remakes of the Arland series instead of the original releases, you can start wherever. The games' battle systems were kinda booty before Ayesha and they got really good around Escha&Logy. Rereleases updated the battle systems of the Arland series to match late Dusk.

Each series is set in a vastly different setting from the other. There's references to each other between them, but it seems they're all different universes (or at least VASTLY different time periods).

Oh, I guess I can start with Atelier Rorona: The Alchemist of Arland DX and see if I like it from there.
