Blitzball in FFX
Sphere Break in FFX-2
Ice cream rhythm game in KH BBS
Chao garden in SA2B
Dedede's Drum Dash or whatever it's called in Kirby Triple Deluxe (never bought the spinoff though)
The connect-the-dots game in Kirby Canvas Curse
Skateboarding in Spyro 3
Several minigames from Ape Escape 1-3

And a ton more that I can't remember off the top of my head.

I actually really enjoyed the fishing in FFXV. Not enough to catch all the fish because the progression system just wasn't there (you can get all/most the best equipment before you even bother with the minigame) but it was solid.

Kingdom Hearts: BBS had a Fortune Street style minigame to unlock skills and such. Most people seem to dislike it but I LOVE Fortune Street so it was pretty fun to me. I'd play a full KH Fortune Street game for sure, why hasn't there been a new one since the Wii game!?

Not sure if Adventure Mode in Smash Bros. Melee counts but it was and to this day is my favourite singleplayer SSB mode. Brawl took it a bit too far with Subspace Emissary, though (and really should have stuck with pre-existing Nintendo baddies to fight, not the weird Heartless knock-offs).

Also, Chao.

Blitzball is my absolute favorite, to the point I didn't play it on my "Perfect Run" until end game, so I could have my favorite team. This was about a year after the game released; even now, I still pull out my PS2 a couple times a year, launch the game, and just play a few rounds on my save file.

Triple Triad from FFVIII, and Chocobo Hot and Cold from FFIX are close ones.

I actually liked that kinda rst thing in fort condor in FFVII.

The whole minigame set on syphon filter 3.

The motorbikes time trials on yugioh world championship 2009-2011.

Also, already mentionned in this topic:
-Hot and cold, FFIX.
-Tekken Force, Tekken 3.
-the hunts on FFXII(on the edge on the definition of 'minigame' tho).

What was mentioned, but I don't like:
-triple triad, FFVIII.
-fishing, BOF3&4.

There are a lot more of minigames that I liked/disliked, but those are the ones I remember right now.

Ooh, I forgot about KH BBS's Command Board. That was frequently frustrating, but still pretty fun. I think most of the appeal was the payoff for the main game, though. It felt really rewarding in how easy it made obtaining, leveling, and fusing commands.

Chao Garden is obviously a great one.

Didn't like Blitzball in FFX so much, but Sphere Break in FFX2 was a ton of fun. Easier for my brain to wrap around, and the learning curve is much smaller.

I also liked all the gambling minigames in RDR. Fun way to kill time.

Mini-games that just add time to the game and have a completely different tone from the main game are terrible, and this is almost all of them.

Examples of games that implement mini-games atrociously: Final Fantasy, Far Cry 3/4, Dragon Quest (casinos)

When are they done well? When they flow naturally within the game, aren't a jarring change from tone/pace, and help expand the universe. Examples of games that do this great:

- Terranigma: the entire portion of the game where you help grow the different cities is arguably the most enjoyable part, and it helps build out the background of those characters you're interacting with to do it. You see tangible and lasting progress from your efforts, and it's incredibly rewarding

- STALKER: Call of Pripyat: The game is loaded with sidequests that are arguably more enjoyable than the main ones. They're all completely fitting with the characters who give them and help build out the world. Some are absolutely creepy and horrifying, like the one quest where you're asked to help a group of stalker kill this mutant at night in an old, abandoned amphitheater
