The post SotN Castlevanias typically have some rare monsters (such as the tsuchinoko) fortunately you can just bump in and out of a room repeatedly to encounter them.

That's partly due to the mechanics surrounding it, someone needs to lose all their souls in a specific spot then they'll spawn. Therefore the less players there are, the less likely you are to spot one.

Feebas is my personal gripe, specifically gen 3. It only spawns on a random fishing tile and even if you go through every single one of them it still doesn't always appear in the random encounter since it's like a 25% chance or something.

Larva Eater from FF XII satisfies both: you have to kill 256 enemies while remaining the Great Crystal area before one spawns, then it can reappear again after beating another 30-255 enemies. It rarely drops the Danjuro, the most powerful dagger in the game, and this is the only way to get it (I can't seem to find the actual drop rate percentage, and the game's chaining mechanic further complicates this).

Apparently the Zodiac version alters this by giving you other options for obtaining the weapon (and calls it by a different name). I only ever got the Danjuro once, and it was one of the luckiest drops I've ever gotten in gaming. I couldn't get any of the 'shortcut' techniques to work and was frustrated as hell after hours of grinding, and I told myself 'I'm gonna try one more time and then I'm done with this shit forever;' sure enough, the last Larva Eater dropped one. I cherished the hell out of that dagger and built Ashe around using it; pretty sure either it or Vaan w/ Yagyu Darkblade got the killing blow on Yiazmat that playthrough.

Some are innocent, cute-looking creatures that do no harm, while others are also innocent, cute-looking creatures who will literally one-shot you with their homing projectile attacks.

Tonberry in the Cavern of the Stolen Fayth in FFX. Catching 10 of those for the monster arena was a huge pain in the ass, mainly because they were so rare to encounter.

Shin Megami Tensei I or II (can't remember which) has this beat.

The fiends have a 1/256 chance of spawning on exactly specific spots in the game world, and if you beat them, then there's a 1/256 chance that they drop a superweapon.

Chimecho in Pokemon RSE is an extremely rare spawn. A shiny Chimecho makes finding a regular one look like finding a Zubat in a cave.

Between being able to buy sirens to a fairly forgiving drop rate I was able to farm out five adamant armors on the pixel remaster. Never bothered back in the snes days.

Assuming no mods: Red Iridium Bats in Stardew. They only start to spawn on floor 880 in the skull caverns, which is pretty unrealistic to ever get to.

I think it really is this.

Vyragosa is a rare mob that spawns every two to eight hours in one of four locations across the Storm Peaks zone. There's roughly a 10% chance that instead of Vyragosa, the Time-Lost Proto Drake will spawn instead. People can sit there for weeks or months and never see it.
