The way I categorize JRPGs is if they have anime-style characters. Thats why I would even characterize a South Korean game like Genshin Impact as a JRPG.

If you want to take the literal definition of JRPG into account, then yeah you can probably count Dark Souls as one. I, on the other hand do not.

This kind of begs a "No true scotsman" argument to me. Is JRPG understood as a genre, or just as RPGs that come out of Japan? Because if it's the latter then sure, it's a JRPG, but that feels wrong.

The J may mean Japan, but no. It came to define a specific genre of games, usually with weebshit attributes and anime design. No, the Souls are NOT jrpg.
