Boba Fett was killed off as a joke despite being popular even though he was given little to no development whatsoever. Mace on the other hand is a key figure in the prequels who serves his critical role in pushing Anakin to the dark side through his needless antagonism to Anakin, goes on to defeat Palpatine in a duel, and is the final catalyst in Anakins turn. Mace ultimately fulfilled an important role in SW and his death was the perfect way to end it. Boba on the other hand was a glorified henchman who fans couldnt help but love, and ultimately got screwed over by George being so disconnected from his fans. TCW will build him up as a threat with a three episode arc only for Obi Wan Kenobi to show up in the last ten minutes, easily chop his arm off or something and dismantle his entire plan, then skip away. He added nothing to any overall plot and didn't serve development for any other character. He started to get good in Rebels as temptation for Ezra for like, three episodes.
