terraria was pretty fun crafting until you get to hard mode and they're like "ok, now do all of that again but 10x as much"

I kinda liked crafting in Star Ocean games, but in a lot of series, it's just boring and/or unnecessary. Newer Tomb Raider games are a good example.

Not typically. Games where crafting is the objective, sometimes. Monster Hunter or Minecraft for example.

Crafting tacked onto an RPG or a FPS, not usually. They're usually just gimmicks to make you sink time into the game and maybe blow money on microtransactions.

Crafting lets you turn generic ingredients into usable items. People like making choices, here you get to choose how to spend multiple resources in a variety of ways. It gates item progression to difficulty and story progression while also letting you make meaningful progress beforehand. In some systems, it lets you customize the outcome of the item created.
Yeah, there's plenty of bad examples, but there's reasons besides game length to make a crafting system.

Oftentimes in games it's a complete afterthought. And ends up poorly implemented. Like DQ8. Theres barely a handful of items worth crafting in that.
Or
Xenoblade chronicles X? Gathering the material takes so long it's not worth doing during the main game.

Kingdom hearts. If not for the ultimate weapons most players would never even know crafting exist in those games.

Then theres most others where crafts straight up arent worth making and or are just inferior to shop, chest items overall.

Crafting was pretty great in TLOU multiplayer. Added an extra component of strategy and made for some intense moments where you're trying to make a bomb or whatever while someone's trying to gun you down.
