Actually considering most children and even younger teens are sensitive to bitter tastes, its not so far fetched, though calling a grilled cheese a baby food is still dumb. If I added tomatoes to this and skipped the second slice of bread I basically have bruschetta, hardly a baby food.

It doesn't seem particularly melted on the inside. I recommend cooking at a lower heat for a longer period of time to let the cheese more evenly melt. I would also recommend adding a second cheese like a white cheddar or havarti to add a bit of other flavor and give you that string.

It wasnt supposed to be melted. The pearls were very chewy and squeeky like curds and I wanted to keep that, hence not very melted.

And flavor wise the cheese tastes great so . Mozzarella isnt flavorless when its fresh.

I suppose that is fair. I wonder if you could get a compromise on the squeak vs string by putting a small amount of mozzarella on earlier while cooking the bread and letting it melt then adding the bulk of the mozzarella later in the process. Best of both worlds.
