Almost all of the English language has no gender, but as soon as you start talking people, words suddenly have genders. I know English isn't known for consistency, but come on.

I will always see "they" as referring to a plural, idk. Even when I use it myself to refer to a singular person, it irks me.

If you're speaking of a person of an unspecified gender, you use the singular "they". It's pretty widespread, and I'm sure you wouldn't notice it in everyday conversation
