I really hate this part of the interview as I am never prepared for it, and don't know how to appropriately answer it, especially when it comes to phone screenings. I am the type of person that will ask questions if I have them.

Ask questions.

1. 'What's the day to day of this position look like?'
2. 'Will I be working on a team or is the work more independent?'
3. 'Is there anything about myself or my resume that concerns you?'
4. 'What's a guy gotta do to get a bj around here?'

Etc.

Then prepare for it? It's a standard question. You should be able to ask them about the organization's culture, the job's day to day, potential for career growth within the organization... Do some homework on the place you're applying to.

just ask them what they like about their job with the company.

I always have questions prepared, but sometimes they end up answering them during the interview anyway. That can be annoying. But I'll still have questions left because there are some that rarely get touched on. Asking what they like about the company/job is a safe bet.
