It's the thing he's most known for and the only thing keeping him relevant. He can let out a chapter once in a blue moon and keep milking it. If he ever flat out said he's not finishing it people would forget about him I highly doubt that. Game of Thrones, the show, already established his power to do more like when he created a prequel storyline about the Targs and people watched that. Finishing the series wouldn't mean he couldn't milk it anymore, it would just give him more opportunities to do even more with it. At this rate he's going to be known similar to the Wheel of Time author whose reputation is most infamous for dying before he could finish the series.
