At one point, I was going to make a beginner's guide. It never really got off the ground. I made 3 episodes that were for deciding if you should try the game, rather than talking about how to play it yet, and then I decided I'm utter shit at video editing and stopped.

Jean is a great pick-up early. I know some may argue, but I might go so far as to say she might be the best five-star character you could get when you're first starting out. The folks here will be more than happy to help you with anything you're confused about. Note that we also have a discord channel.

Regarding the gacha, here's a rundown of the currencies:

  • Acquaint Fates and Intertwined Fates: Are the "wishes" or "pulls." They're the actual things you use to pull on the banners with. They look like sparkly orbs. While usually an intermediate currency, you can just get wishes from a few places like the battle pass.
  • Primogems: Are used to purchase fates. You can either buy them in Paimon's shop or you can just let the game autopurchase them whenever you have enough. It costs 160 per wish, or if you can restrain yourself, 1600 per ten-pull. You get primogems, at least in small quantities, just for playing the game as well as 60 per day for doing your commissions. (Those unlock at, I think AR12?)
  • Genesis crystals: Are basically just primogems you paid money for.
  • Stardust and starglitter: Are used to purchase stuff in Paimon's shop. They each have their own tab. Save the stardust and only buy the five wishes of each type. MAYBE the mora. The rest of that stuff is easily obtained just from wandering the world. Starglitter is harder to come by. It also can be wasted on a bunch of meaningless crap, but you can buy an unlimited number of wishes with it or you can pick up a 4-star character or one of two weapon types. The weapons rotate per month. I wouldn't get the royal weapons, but the Blackcliff ones are okay if you need a weapon for someone.
Those are the only currencies that should matter for the gacha. Obviously there are a ton more like anemo sigils, experience books, weapon enhancement crystals, resin, and arguably anything you can do at a crafting table, so I'll just leave it at that for a first-time explanation.

As a general rule, when you are pulling on the banners, you want to pull exclusively on the limited-time banner. (The one that currently has Dehya on it, but don't pull on Dehya even if she's hot. She'll be hard for you to level.) The beginner banner with Noelle is perfectly fine, too, but disappears after 20 wishes. The standard banner (Mona, Qiqi, Keqing) is usually used exclusively for the acquaint fates you gain incidentally. Usually you want to save for intertwined for the character banner. Oh, and don't pull on the weapon banner. It's a scam.

If you feel you mismanaged your opening pulls, don't. They're a pittance of what you'll get over the long haul, even if it will take time and/or money to get more. Jean is a great place to start from. If you tell us who else you have, we can make some team suggestions, but the absolute honest truth is that you should pick the team that you like and play them. I wouldn't jump around too much. Mismanaging your exp books can be a much bigger headache. But fool with them all at level 1 while you can and then decide on what works. Jean is a healer, so you won't need to use Barbara or Noelle. Kaeya is the best of the freebies, by far. You might get stuck bringing Amber around for a bit just to have a bow and a pyro character for some of the puzzles. I would look to any four-star characters you might have also pulled to finish your team if you're looking for the most capable team. But if you decide you like Lisa because she's got big boobies, then use her, or you simply like having the Traveler around, hey, you do you. Even the most cursed team comps are viable. The most important part of this game is that you do what makes it fun for you.
