I think it's because Chopper's first fight, against that abomination Wapol made from his two henchmen, was on his home turf against an enemy he was at least a little familiar with (before they merged, anyway). Fights afterwards take place in the outside world where he has no experience and isn't as confident about his ability to beat the enemy. Seems to make sense.

Also Zoro is closer to Sanji's strength than he is to Luffy's. They're pretty equal, with Zoro having the edge (literally). It's one of the reasons those two not getting along works so well.

That makes sense, and shortly after I posted that Zoro even had a line that was something like "when push comes to shove, Chopper can step up, don't worry about him."

So like, I get it. But I think because I like him so much I wanna see him kick ass more lol.

And while technically you're probably right that Zoro is closer to Sanji than Luffy in strength, I think that's more a testament to Luffy's insane power levels than a compliment to Sanji.

As of yet, Zoro has taken down far higher profile enemies than Sanji, and a higher number of them.

Like, where I'm at currently, I would say the crew's power ranking is probably:

Luffy >>>>>> Zoro >> Robin* >> Sanji >> Chopper >>> Ussop >Nami

I admittedly don't fully know where to place Robin solely because I haven't seen her fight much yet, so take her placement with a large grain of salt.
