In regards to the start, you'll be doing yourself a favor if you resist the urge to rush out into the open world. Attend your early classes, do the side assignments given by the professors, get the various spells and abilities mostly unlocked. The same goes for the grounds of Hogwarts itself. The place has all sorts of nooks and crannies to explore, but you'll need spells to solve a lot of the puzzles placed around.

That being said, it can be worth doing the first tier or two of various challenges early when able in order to unlock things. I.e. inventory space is limited at the start, so do a few of Merlin's Trials after being introduced to them to unlock the first tier or two of upgrades for it.
