basically, the opening cinematic provides the framework of the story, the dialogue from the NPCs the context (you might need to find them and exhaust dialogue options and/or do their side-quest), and item/weapon/armor/etc. descriptions help fill in the gaps.

a lot of content is missable/difficult to obtain, so a lot of players defer to others, like VaatiVidya, for example, for lore and story breakdowns.

I do appreciate games that try to show you the entire story instead of tell you, but there has to be some sort of groundwork and the Souls games are more cryptic than anything else I've seen in video games. Zelda BOTW for instance doesn't outright show you all of what happened leading up to the actual game, but it shows you the important parts and IMO that's all we need. Bethesda games tend to do a good job of this with their side stories as well
