I think they just don't have faith most people would be willing to pay AAA prices up front to play AAA games on their smartphones. The proven money making method for smartphone games is microtransactions and loot boxes/gatcha, and they work extraordinarily well.

While that is an issue (I think it was the devs behind The Banner Saga that talked about having huge problems trying to sell their game on mobile for even $5, despite selling it just fine on other platforms for much more than that), I'm not actually sure how relevant that is to the modern AAA market. Most AAA games are no less monetized than the average mobile game, such that the sale price is actually a fairly small minority of their total revenue. Really, the only reason they continue to have a sale price at all is because people are still willing to pay that and still pay for post-purchase monetization afterwards. The second that changes, AAA games will be going F2P.
