This is the part that interests me more. If it was done by "a commercial lab", I'd be very interested to know what lab it is.

Because that lab could be entirely staffed with fuckwits who couldn't find their own asses with both hands and a map, let along DNA. Or they could be corrupt as fuck. Or they could even be legitimate, but operating under poor methodology that leads to flawed results.

In the actual NYT article, the writer says "I began searching for a commercial lab that could test a sample of Subways product. A handful of them politely declined my inquiries, citing technical limitations and company policies that made my tuna ineligible for analysis. Eventually, I found myself on the phone with a spokesman for a lab that specializes in fish testing. He agreed to test the tuna but asked that the lab not be named in this article."

Which I kind-of reflexively translate as "I had to keep calling around until I could find a lab disreputable enough to ignore ethics and actual methodology to push for the result I wanted, and the one I talked to didn't want to be identified because they don't want to get called on their BS."

As painful as it is to make this pun, I have to say this entire story sounds really... fishy.
