Depends on how sensitive the genie is. In some stories you actually have to wish with intent rather than just say "I wish". On the flip-side, the moment you even think the word wish you're committing to it, or sometimes even subconscious wishes count.

Assuming you can actually qualify wishes, it wouldn't be that difficult to say something like "Infinite wishes, but they only count if I wish out loud and then snap my fingers" or something.

Though then you have to worry how much of an asshole your genie is - he may start trying to think of ways to reinterpret your wishes to wish you into a bird or something that doesn't have hands so you can't snap.

If you've got one of the asshole genies, what you really need to worry about is that immortality doesn't even include agelessness. That one goes all the way back to Greek mythology, where Zeus granted immortality to someone, and they just kept getting older and older and older and withering away even as they lived forever.

Immortality just means you don't die of old age, though. It doesn't even mean you CAN'T age. You're thinking more of adding invulnerability or some kind of ridiculously overpowered regenerative healing factor into the mix.

The problem with eternal life in general though is that you dramatically increase your odds of getting buried alive or trapped somewhere for all eternity, with no possible means of escape or suicide, because you cannot die. Then over a long enough time scale, you start to run into problems like eternal boredom, watching everyone and everything you've ever loved die, and on a long enough time scale, the sun burning out and you being trapped forever on a scorched lifeless chunk of rock in a dead universe.

And that's not even taking into account that even if you're immortal and invulnerable, you presumably still feel pain, so drowning is still extremely uncomfortable (you can't breathe water, you just can't die from drowning, but you're still drowning), you presumably still suffer from starvation and dehydration pains, if you fell into the sun you'd still be burning to death more or less forever until the sun itself went out, etc.
