As someone who is attracted to many different genders, I feel like the people saying this have a misunderstanding of the everyday experience, especially the men that say they want to be a bisexual woman.

I mean, it is objectively true that bi/pan/whatever people have more options than people with more exclusive orientations. People just have a tendency to overestimate how many more options there are, given that only a tiny subset of their new target gender will be into theirs. Straight people going bi doesn't double the dating pool, it increases it by ~11% (presuming ~10% of both men and women are gay, you go from ~45% of the population being eligible to ~50%). Gay people going bi get a much greater effect, but they already understand that by virtue of having personally experienced how limited gay dating can be. They also tend to forget that their standards would be roughly the same for the new gender as for their current preference, so it's not even like you're going to care about all of the new people in the pool.
