"Sword and shield" is a much more common phrase than "shield and sword". Even the slang "sword and board" is more common than the alternative.

If we're going by most common word order, the original Pokemon games were "Red and Blue", so it would be Sword/Red and Shield/Blue, which is probably the more suitable match anyway (sword being a weapon, red being a violent color, weapon = red, versus shield being defensive, blue being more soothing, defense = blue).

X and Y would work with the same logic = very few people are going to say "Y and X". There are generally more instinctively proper ways to say things when you're naming pairs, and a majority of people will always gravitate to one order over the other.

For those two, you've basically already named them in the most common order they're named in. So we can use the same logic as above.

The correspondences there also work pretty well, though. Black being the "evil" color in the west and white being the "good" color suits well to making black/sword and white/shield (which is actually the colors of the Sword and Shield Runes in Suikoden), while gold pairs well with red and blue pairs well with silver (and golden sword and silver shield kind of feels like a more natural set of pairs than the reverse, based on how most cultures prioritize the value of each).
