I might have a perfect Krabby, guys. He said, "Overall, your Krabby looks like it can really battle with the best of them!" And "Its stats are the best Ive ever seen! No doubt about it!" And the little rainbow bar is full. Which I guess doesn't mean much because that should change as I grows levels, right?

Unless it mentions all 3 stats, it's not perfect. And just because it mentions 2 as being at 15 doesn't mean that the remaining one will be. I've had a few 15/15/10s or under, which is still over the 82% threshold and looks like it might be perfect until you actually check the IV.

It can actually say that without the pokemon being perfect. For example I recently got a 14/14/14 kabuto, in game appraisal says it is as good as can be and that all stats are equal, which they are, it just isnt a 100%

It's dependent on what the leader says both before and after mentioning any particular stat(s). For Instinct for example, it's only perfect if Spark says it "can really battle with the best of them," mentions all three stats, then says it's "the best I've ever seen." If any of those three things don't happen, then it's not perfect.

Yeah I understand what youre saying, but a perfect mon has 15/15/15 stats

The in game appraisal system is fairly vague so your team leader will give the same message for a perfect pokemon that they will a 14/14/14 or even a 13/13/13

While the quality of messages vary by team, you can just remember the specific messages. However, you won't get the same message for a 14/14/14 as you do for a 15/15/15 because there's a different message for a 15 than a 13 or 14. The first message you see pertains to IV range, the second set of messages are which stat is highest, and then the final message tells you the range for that stat. The brackets are 15, 13-14, and then... it doesn't really matter because it's going to be garbage. If you have a 15/15/15 or a 13/13/13, you're going to see the same first message (because it's going to be over 82% regardless) and you'll see three messages denoting that the stats are tied, but the last message will be different.

Also, is there a way to see your health while your pokemon is at a gym?

Meaning what? HP? No, you have to wait for it to come back.
