Only about half of the studios specializing in gay sex do testing for this according to a few articles I found, although these were from a year to a few years old, so that may have changed. But apparently the main scare is that you must wait 14 days for an HIV test and 3-5 weeks for other STD tests, which means that there's a chance that you could become infected in those two weeks before you shoot. There was actually a case of a guy who was unknowingly infected last year where he took the test, got infected, had sex with multiple men, then went on to have sex with a woman for a shoot and the men didn't get HIV, but the woman did.
