I would honestly recommend Gotta Knock a Little Harder from the movie, or What Planet Is This if you don't mind jazz. The Cowboy Bebop OST is considered by some to be one of the best anime OSTs ever, and imo it's totally deserved. You know how you listen to a bit of incidental music from a show and it's just a couple of little flourishes and a bit of a payoff at the end to make it easy to loop together as a part of the background? Cowboy Bebop does have that, but it also has these awesome show-stopping vocal songs for some fights or like big story moments that take the entire show up by about 4 notches.
