I find it hard to understand this point compared to other things you could compare it to. Naruto is a one note character, natsu is a one note character, toriko is a one note character, Goku is a one note character, etc. People say Luffy is one note but he's incredibly unpredictable at times, which is cool. *Ichigo is a two note character. He's either badass and untouchable or sad and pathetic. Nothing in between.
With that said, One Piece still provides emotional depth and truly sad moments and I think to a level that other shonens fail. It sets up characters to love and then knocks them down brutally. There's a lot of loss and bittersweet going on. There's romance and adventure. People cried over a boat. A boat! Also minor point but his gimmick is just that he would like to see pants, not sniff them. It has the worst artstyle in all of the anime world. Seriously. Its fucking awful. The art style is just gonna be a preference really. I really like it and prefer it over the cookie cutter anime style that nearly every other anime in this genre has. You could point out that it has really lazy animation at times and that would be true, but the latest arc in the anime is just pretty incredible animation wise, especially for a weekly anime. In fact there just aren't any other long running weekly anime that have animation this good. Spoilers, but I imagine you don't care about that, but check out this.
