What I do on flat surfaces like that is to Long Jump (makes him slightly faster) and then just constantly triple jump. Such as the spin throw being done by spinning Mario around and then throwing Cappy, or the long leg plant thing fully stretching by pressing both X and B, or other things. There just weren't very many memorable areas for me in that game, only ones I remember are the shopping mall and the children's school, and the final battle. Makes me think they might add more locations in existing kingdoms for DLC.
