I want a Pokemon game where you only get ONE Pokemon the choose from at the start, but that Pokemon can be any Type you wish, and you select the Type when you first get it. Then on the first Evolution you can pick a second Type or the same one, and then the third you get to either go 2/1, 1/2, 3/0, and each choice gives you a different Pokemon slightly

Yeah. It's no different than watching the first season of GoT because both shows already have hundreds of years of history that is there for you to find out, but you don't need to do a deep dive like that.
