I agree about just making whatever healthy thing (lean protein + veggies + brown rice/quinoa is a good template) and then giving your dad a bigger portion. In general, if you want energy more than, like, weight loss, you'll want to go veggie heavy and add in some fruits as well. On the other hand you want less meat and fat. You'd also want to look into supplements probably because low energy can be caused by deficiencies that aren't always easy to fix with just diet. Try to cut caffeinated drinks (which cause you to crash and are empty calories), or at least stick to unsweetened green tea/black coffee with no dairy if you've gotta have it.
