Based on this statement I have a decent idea of the area where you either live or grew up :-).
That would have to be bacon.

My most commonly eaten breakfast is pho bo, so beef, I guess.
Pork roll is pretty good, great job on that one New Jersey! Haven't tried scrapple yet.

Bacon. Though I rarely eat it as a breakfast food. I'm much more likely to wind up eating it on a burger, or sandwich, or on a pizza.

Though personally only one side of my family ever made scrapple, and the entire concept of it always kind of horrified me as a kid.

And I was never a fan of pork roll (and yes, it's pork roll, not Taylor Ham) in spite of being morally obligated to do so because of it being my state's official breakfast sandwich. For some reason the smell of fried pork (whether it be pork roll, fried ham, or something else) always kind of makes me a bit queasy. Bacon's about the only fried pork smell that smells good to me. I have no idea why, it's just always been a thing.

Bacon, on account that I don't really eat meat during breakfast, don't eat beef or most pork in general, and can do bacon if it's cooked correctly and, even still, only in moderation. Eggs on the side of some meals? Sure. But rarely ever meat.

this might sound weird, but I prefer mixed meats - like, I like all the meats so what I want is a little tiny ham with like half a sausage and one slice of bacon, seasoned with chives

Bacon then sausage or ham. My son calls pork roll, "flat hot dog", and also likes all the breakfast meats including scrapple.

I like those circular sausages a lot. The real answer I guess is bacon because bacon can be one of the most delicious meats in the universe but if we're talking average quality like at a Denny's I choose those sausages.

This. Good bacon is very good, but getting good bacon is a lot harder than getting good sausage.
Bacon is God-tier, of course, but if I don't have bacon, bacon-flavored Spam sliced thin and fried up nice and crisp is really good too.

The advantage of Spam is that it keeps in the pantry for literally years.

True but bacon freezes well and is easier to handle when thawed.
There's no way a can of Spam lasts more than a month, maybe two in my home. It being shelf stable is cool though.
I made a Spam casserole the other day. Spam is so good.
It is up there with bacon, but i mean, bacon is goat. Even vegans like bacon.
