Social situations can be hard. I always try to just be as honest and respectful as possible. Not everyone is going to like you, but the people who do will like you for you. Regardless of all of that, we're all human, and we all say dumb shit. And worse, we all obsess about the dumb shit that we say. The cool thing is that no one but you remembers or cares about it. You can never control the anxiety, but you can figure out ways to cope with it.
