Ok, here's an example: Score based Karate/Taekwando games as well as some Boxing games (although health bars are more common)

You either killed your opponent or they killed you. You could also maim them, but that just crippled their moveset

If you consider Smash Bros a fighting game, taking on damage makes you get launched farther when attacked, which makes it harder to remain on screen (falling off screen = KOd)
