DK Mountain is a brilliant level.

8 Deluxe, played them all pretty extensively. It is the definitive Karting experince.

Double Dash and DS are the only ones I really got into.

I've tried 7 and 8. 7 was okay. 8 lost me as soon as I led the CPUs the entire time, was 2 seconds from the finish line and got blue shelled into 5th.

8 Deluxe finally edged out Double Dash!! for me. For the longest time my holdout was that DD had the All Cup Tour feature while 8 didn't, but then someone pointed out that you can more-or-less replicate it in VS Mode. The Booster Pass was the final nail in DD's coffin; you simply can't compare 96 friggin' tracks versus 16 for variety (DD predictably got shafted as far as Booster Pass representation goes, but they at least included Daisy Cruiser, which was the one track I'd been begging for the whole time).

only one I've ever been able to tolerate was Double Dash, it's not particularly good or anything, but it was relatively playable, which puts it far above the rest of the series

Double Dash is my favorite for the multiplayer, just so many good memories of playing it with friends. DS is my favorite for single player, thanks to the mission mode that I wish they'd bring back. I think DS wins overall because I also really liked how it did battle mode with you starting with just one balloon inflated, but more in reserve that you could blow up, as it added another layer to the strategy.
