You can (and should) still wash a seasoned pan. What happens when you season a pan is that the oil hardens and forms a sort of non stick coating that won't come off unless you use a strong cleaning agent like lye or scrub too hard.

As long as you use a moderate amount of soap and don't scrub too hard with it, you shouldn't have to worry about removing the seasoning. Also after the pan dries it's a good idea to rub a little cooking oil on it with a paper towel before putting it away.

Seasoning a pan is something you do separately from cooking. Usually coat it in a seasoning agent (iirc for some reason I think margarine is preferred) and then bake the pan.

Occasionally you'll need to reseason. It's not a permanent thing. If you're cooking with black sludge I'd advise contacting poison control.
