If I were to use a dual monitor setup, would it be as simple as having a display port connected to my main monitor and pc and an hdmi from my computer to the second monitor?

yeah, depending on your video card will depend on the connections you'll have available. Windows will automatically detect that kinda thing for the most part, and you can change the options (ie, which monitor is your main, on the left / right, if it's got them mixed up or whatever)

I have multiple display and hdmi so I can keep my main as is, just hook up the second via an hdmi and then setup in the settings? Also if i needed help looking up something on game while playing on the main monitor, could I do something different on the second one?

A bit unrelated, but its even possible to run a dual monitor setup to a single monitor. I have an output from my GPU to my TV as my primary monitor. Then I have an output from my MoBo with 7.1 to my receiver for my audio. Sometimes programs get shuffled to my second monitor and I have to switch to my receiver input to see the second screen and blindly click+drag it back to my primary video output.

Its a weird workaround for high quality audio when using your PC as a home theatre. Not a common use case, but perhaps a useful bit of information for anyone who might check this topic.

HDMI/display doesn't matter as long as your monitor and video card support the connections. If you have 3 display ports and 1 HDMI on your video card, you can mix and match monitor connections to get them all in. At work I have a 4 monitor setup, one of the connections being a monitor using DVI and a DVI to display port adapter.

Computers will automatically detect that you have more than 1 monitor. The only settings you have to change are the order of the monitors and maybe the height, so that when you move your mouse from the left screen to right screen, it doesn't jump around.

And yes, I do that all the time. I'm playing the game on my main monitor and have some kind of info on the other monitor. Most of the time I'm watching a youtube video while I have the game on mute, if it's a repetitive type of game like a rougelite.

My PC has the 3 different display ports with each different wire.
Have a 3 monitor setup now because wife brought monitors from work when they closed down. Each one is using a different cable. My main display used the hdmi connection since the other screens didn't have hdmi
