They don't.

They cross themselves before and after a prayer, and when the enter or leave a church.

Yeah this is how it works. I've never heard of making the sign of the cross just because you saw a church.

What you are probably seeing is people who were prompted to say a silent prayer when they happened to see a church.

Catholics do not make the sign of the cross just because they saw a church.

As a 'confirmed' Catholic (I haven't stepped foot in a church since I was confirmed back in like 2009 lol, family obligations, yay?), I can say I've never heard of this.

As a 'confirmed' Catholic, in a catholic country, I also have never heard of this.

I pass a catholic church nearly every time I go shopping or to work.

My parents did that whenever we drove past the church. I guess they were making up for the fact they didn't go to church that week or whatever?

Speaking as a practicing Catholic who does this, it is to show respect for the consecrated host that is typically housed in the tabernacle within Catholic churches.

Actually I wouldn't personally mind a deeper dive on that subject. Like Catholicism retained much of its ceremony and organizational structure even though the rest of the faith moved towards the belief that God is a personal, direct relationship that needs no "red tape".

To me the latter sounds more...familial and warm. If you believe in the Holy Father why not try to make it something that you get to participate in personally and without a hierarchy? If you're praying for strength or comfort in times of hardship it probably feels more meaningful to just ask God for guidance in the quiet of your own mind than running it up the clergy.
