For example, FF7Rebirth will use save data from FF7R, can I delete FF7R wil it keep the save data and if so will I get the bonusea for FF7Rebirth?

Deleting the game should still keep the save data. At least in a sane system.

Deleting the game doesn't affect the save data. That's stored in a separate space.

Save data and game data are separate. This has been the case for every system since pretty much the beginning of digital distribution.
