I finished the Wheel of Time books I have and don't have time to go pick up the rest of the series yet so I'm going to start something else in the meantime

I have Frank Herbert's Dune saga I could continue (just read the first one so far) or I could go into the storm light archive

I also have a couple Crichton, King and Gaiman books I haven't read yet.

Also on a semi related note do you ever read multiple books at once or do you keep it to 1 at a time?

Dune went downhill after the first book imo.

If you want something lighter, try Hard Luck Hank. I particularly enjoyed the audio books, but the text versions were good too.

I'm usually reading 2 or 3 series at a time.

How do you break up different books? 1 each day in rotation? 1 each session? Read a chapter or 2 then switch?

Not really regimented by any means. I just pick up the book I want to read when I want to read it.

Gaiman's stuff is good. If you're looking for something outside of your collection I recommend the Inheritance Cycle (Eragon, Eldest, etc.) series and Zero World by Jason M. Hough.

Rising Sun is the only one of those I haven't read yet. I'd say Andromeda Strain is my favorite but Eaters of the Dead was very... unique.
