Every winter I get into the habit of making mulled wine, it's delicious and warming.

I've been trying for years to perfect the recipe. I've tried different spice blends, I've used whole spices, I've toasted them, I've toasted them and ground them. I've used different types of fruit. I've tried adding at the start, at the end, I've removed the piths, I've just squeezed out the juice. I've made caremalised sugar. I've tried chocolate and coffee, both instant and ground. I've tried different methods of cooking - a rolling boil, a gentle simmer, a long slow steam.

Nah. Almost none of that matters much. Just add more sugar. That's the fucking secret. -_-
